Hello Justin,
This is a good machine, or a good brand i think.
However, this one is a "compact" one I think? Am I right? with the same spec but smaller boiler.
If you are going to put this at your home, it will be no problem. But the steam boiler won't catch up in a commercial environment.

in the fact that a friend of mine was asking for opinion...
he is going to do some research on coffee machine and planning to open a cafe later...
and he got the quotation for this with same brand grinder... that cost about $28000
so not sure whether this is good and worth... |

I was reading some old post recently.
And I read a post on Alvin's forum, knew that a La Marzocco Linea 1 group sells for 29000 in Just-Java Hong Kong.
Why don't consider this one?
The Wega is good, but the LM linea is better. _________________ Eureka Mignon Hahaha |

I think this is very common for 2/F 3/F cafe
they just provide a place for reading / relax
but not much knowledge in coffee like me.  |

Shing, salty and earthy taste come from the beans.
Roasting or brewing method can only distract the taster from those feel.
Just like if you roast the beans to charcoal, nobody can taste salty or earthy anymore.
If you search the word SALTY in coffeereview.com, you will found many high rated roasts also have that character.

The proprietor of the coffee place in Bangkok that I brought the bean also confirmed this one. He said he has to roast real dark to "distract" from the salty taste. I think his roast is at the expense of the body. I can't taste the salty undertone at his place.
Also, I think coffee may be too bright just right after roasting, accentuating the salty taste. The Thai bean 1 week after the roast date tastes better, ie less salty with an easy to detect and good acidity.
So, don't be too hard on yourself, ar shing.  |
