I am also a roasting starter, so I just can share some tiny experience.
The possible reasons for you listened only ONE crack may be:
1/ the 2nd crack sound is used to be small that you may not distinguish it.
2/ the time gap between 1st crack and 2nd crack is so small and mix together due to the sudden rising temperature or uneven temperature distribution. Also I heard that some types of bean are particularly difficult to separate 1st and 2nd crack (due to their different processing methods...).

did your bean surface show oily? if it is, it should have 2nd crack I think.
Also check the weight loss of the roast. |
