haha where you get the drip set 
and you can try adding a filter paper at the bottom of the vietnam filter as those holes are too big
also I like dark roast beans for ice drip

I know what is that flow control 3 way valve just ask you where to get it hehehe
your setup seems quite tall and I fear it will fall down without support enough support
