I suggest to keep the tamp force constant. 
Well, did your thermometer preheated?

No I am not master.
Once the water get contact with air, the temp drop down like a rock. And the thermometer cant react before the temp drop, so thats why you saw the 70x temp.
Well, may I put shing on the table?
