The world trend is,seal and rest the beans a few days - even up to 14 days, to release and develop their favour - and this is not only done by usual Joe or ??????? - World Cup tasting Championship and World Barista Championship Tim Wendelboe does that, WBC James Hoffman does that and recommend that to me through email... the list go on and on. Some big guys in speciality coffee industry even recommend airring and let the beans breath before using them (for espressos).
