My thoughts:
1)You draw air out of a container implies that there's lower pressure
2)Internal gas pressure of fresh beans should be larger than atmospheric pressure. One possible reason is due to degassing, CO2 produced and is temporary staying in the beans.
3)The difference in pressure is actually enlarged
4)Two ways for flavours to lose is by evaporation and diffusion. Would anyone studied physics hydraulics etc to correct my following statement. Due to lower pressure, originally flavour compounds in liquid state becomes gas state and diffuse. As far as I know, gas can escape far more easier than liquid.
