What is the "standard" for taste of coffee/espresso? How come I always think the taste is "sour"? Well, at least the first taste, though I can get different taste/combination after that?
My question is: what are you looking for (taste, not feeling) in drinking that espresso? |

there's no real standard taste in espresso.
1. when using the word standard in terms of espresso, it usually refers to a set of parameters which professionals follow to complete a blend, or to correct a flaw. Which has zero meanings to the end product consumer.
2. The taste of espresso can be difficult to comprehend for most beginners, you can say that it tastes like a piece of a melted, fine chocolate but without the taste of chocolate and the sweetness. But with more spice, nutty flavor, flower, fruit, plus the thickness and the roasting flavor (a espresso can have many many different tastes and can taste very complicated. that's why I said there's no standard).
3. If you describe your espresso as sour, there can be several reasons.
- your roast is too bright for you.
- your espresso has flaws. (usually cooks too long, bad grinders, channeling)
- you misinterpret citrus as sourness.
People misinterpret citrus flavor as sourness all the time. Citrus flavor comes from the early part of extraction and can add freshness and dimension to a espresso.
