Dear Shing & Landy,
This is Kelvin, i always refer myself Mr Lai.
Thanks for all the friendly tips as always when coming up to your shop. The eureka mignon is sure a very good grinder that i bought from you. Specially thanks Landy for her confirmation on the bottom opening of my portafilter, they got really mad from my request on opening that big of a hole.
I have got a bag of beans sponsor by someone so that i can use it to do some test instead of drinking. Can you please help take a look on my video and tell me what i done wrong for each of them? (of course if possible)
first 4 tests base on below setting:
fine level - the test base on the fine level shing helped me marked down
weight - start from 16.5 to 18g
level of tamping - no idea at all, just tried to push it in and balance the surface as much as i can
16.5g

I have no baseline to reference on, pretty please tell me what i did right and what i did wrong.
1 question though, how come sometimes water slip off from the edge when its brewing?

Isnt the flow a bit too fast? I thought we should grind finer to make the flow slower and achieve the "melting chocolate" at the begining? |

fast flow rate can be the result of channelling.
there are multiple dead spots at the beginning, that's why i suspect the grind is too fine. _________________

yumecow, I talked with neo and Shing this evening on ur scenario and we thought you might want to try pulling again with some fresh beans.
(since you have not mention abt the freshness of your beans, it maybe a problem as well) |

Dreammeow, I have no idea how fresh the beans are either. But I think it's around 1 to 2 month. But did I do things correctly? |

1-2 month old beans are stale.

Hi neo, that's just my guessing, maybe it's only a week. I had tried some really old beans today and I can see not much crema when brewing, so I don't think those beans are that bad from the amount of crema. But I think most importantly, I am not sure if I am on the right track, what do you think?

thanks Neo, i will shoot a video with coarser grind on 18g then, i will then shoot another 3 videos on finer, fine (shing's marked), coarser on 18.5g. I remembered shing said silvia is 18-9g normally. |

hi Jacky, i actually don't have your problem, same bag of beans, always consistent if i use same weight and same coarse level. some mistake can easily be spotted. Thinking maybe ask them in person later this week when buying beans. Not sure if they are too busy to watch my videos. |
