It showed from the basic to his "advanced" technique. I used his advanced technique and found the cup cleaner with less body. This might benefit some as the body itself may obscure some tasting note.

Anyway, the inspiration came from this one by Tim Wendelboe, World Barista Champion 2004 and the following link by James Hoffman showed a closer rendition to Wendelboe's method than the "misunderstood" method by Mark Prince. I haven't tried Wendelboe but will see how it compares with Prince's version.

For those who preferred hkcoffee method, reduce the brew temp to 82 Celcius then, I guess.
