1- NO, all depends on the whole processing, if 7.5g extracts good espresso, then no problem,
BUT I NEVER use single on any of my home spring/leva machine. Even E61 Never Single !!
Most Ideal ??'s surface after extracted - has the screen pattern !
2- ??lever???????????嚟??????? !! ?????????????? !!
3- ????????????? --> Practice more !!
but not the most important issue,
Leva users love Ristretto --> ??? should be fine & enough,
and I always have enough and good enough espresso / Ristretto with my 1972 C67.
??啲???????啲 ?????啲? but must be OVER EXTRACTED + OVER HEAT = ONG 99 , sorry, yes, it is ong 99 !!
You might saw some video/s of slower press due to the fine / appropriate coffee grounds.
But I am extremely interest your video of coarse ground , 30 or more second pressing, please post this, please...
4- If it 100% fits the group perfectly, WHY NOT ? but the holes' s size of the basket bigger or smaller than la Pavoni ones ..

*** Not OVER heat / time and % of water are the key points of leva processing.
Practice more, throw more and drink more, you will know,
This is a really good video of same kind machine BUT do not speak / talk that much as this guy when making an espresso
to delay the best time after ground the coffee and locked the basket, but extraction time also over:

oh i see, Thanks a lot.
by the way, i pull 2 shot last night. the first shot was ok.
but then i pull the second shot, there is only few drop of coffee come out. it didnt seem i grind it too fine, because the lever was easily being pulled down and i dont feel any resistance. and then i tried to push the lever back to the top position and pull again for few times but same thing happen.
did the machine getting wrong pressure?

Sorry, I want to clarify the following things:
first shot OK, do you mean also need to ?? pressing down the lever rod ?
2nd shot and the after shot/s , no need to ?? at all ??
Grounds not too fine, but no water comes out ??
No resistance of lever...
You are right, wrong pressure, but the issue may be caused :
1-Wrong pressure setting.
2-Gaskets too old/broken/not install properly :
Boiler/its cover gasket, group to boiler gasket, piston gasket/s, group gasket ,
all can be the reasons. all pipe to pipe area should be checked too.
3-boiler broken
4-group broken
5-portafilter seems hard to be broken.
6-Steam wand switch not close perfect / gasket problem too.

I just guess, try to lubricate the piston gasket/s and the chamber wall,
check over the group gasket too old or not.
Also check the piston chamber, any water scale inside there; scale loves hot place Wink Wink

Please update result, and try to post pic/video link to share leva journey.

Pocky CHing,
Using the following method to do distribution + Leveling and
have good grounds from a decent grinder.
Not all commercial machines use 58mm basket, some have 54mm only,
My Olympia is 49mm, so if regular size is 58 vs 54 <- commercial machine.
Home machine is 49 which are not too bad.
narrower basket with more height (**same weight of coffee) = more creama, but more uneven issues.

Less than 45mm need more attention and skill.

yes, the first shot i pull it quite hardly but not too hard
i think i know what happen to my second shot.

tonight, i did 2 shot again. the first shot not to mention.
for the second shot, same thing happened, and i keep pulling the lever for couple of times. this time i didnt wait to release the handle. and then it become disaster, the handle was being shot like a bullet and i cant even describe the result here.

so i think my grinding is too fine and everytime i pull the lever the pressure cant really extract the coffee but it stored in the group head instead.
but i dont know why when the coffee is to fine, i dont feel any resistance instead, the lever can be easily pulled...?

how strong you are ? since I am looked strong but no energy / power to move heavy stuff. 50% kidding, 50% want to know , since you dont feel any resistance ...

check everything I answered you above !!
all gaskets, if any pipes, check it too. make sure boiler cover and steam button shut off perfectly.

HK leva fans really poor, people selling it not much of them know what happen and the reason + neweyecrazy killing people price.

please post videos to describe clearly !!
Since it is not easy for me to understand well for the whole situation by word.

just for your interest. when i said no resistance, it is comparatively lesser (much lesser) resistance compare to a normal short.
i tends to believe that my grinding was too fine after the disaster. and i guess the machine somehow prevent me to over press the lever.
i will post some video after i cut the portfilter.

by the way, how many ml of coffee you usually get by the double basket?

Different machines, different baskets with different standard wor.
em, I may say that Exact grinder model with different grind number of setting, for lever machines search from internet... people using how many grams of coffee on same machine and **basket.
my preference:
16gram for MCaL basket on Olympia C67 1971machine.
Brunella double basket same as Peppina 16.5 grams are best for my extraction.
Comocafe 18grams.
some others... ...
So, no standard.
But coarse ground with more coffee better than fine ground.

Piston gasket may have problem or need to relubricate the piston seal.

Also check the group head , does it hold much coffee in the group ?
clean it before the 2nd shot .
